copper and stainless side arm

I have a stainless steel side arm and I was wondering whats the best material union to use copper
does copper and stainless steel react at all ? its all pipe threads .

I seen some strange reaction on my old steel pipe to brass for some reason . 19 years I could not brake any of the threads on steel pipe and brass valves it was like stuck to point you destroy the valve trying to get it apart  so I changed it all to brass on new install $$$

stainless doesn’t react with any metal that I know off, however dielectric unions are much cheaper than copper ones and usually don’t seep like a copper union does.
