My aquastat is set for 160-180. But late last season and now a couple times this season it will allow the fire to reach 200 or so.   

  Time for a new aquastat or is it something else?

There are a few different thing that could cause it. What brand of OWB do you have?
Have you been able to see if it is shutting down at 180?

An air leak could cause you to over shoot. I've had the flap on my door stick open a couple of times and caused if to over shoot.

Hawkins.   Not sure at what temp it's actually shutting down. Fan has never been going when it's that hot , that I've seen.

Door gasket leak is the most common. The air shutoff door could also be sticking.

How deep is the coal bed? Too many coal can be a problem in warm weather. If it is deep, cut back on how much wood you are loading so it can burn down more.

If none of that helps, I would drop the temperature setting 10 degrees and change it to 10 degree differential. The lower differential will shorten the cycle but run more often. This would help also if the fire ever goes out from going too long between cycles.

Once the weather gets colder, you should put the aquastat settings back where they were.

Like they said ...get u a trusted gage to read the temps ...u can steal one from moms kitchen... Or get some good stuff from themoworks
