Copper definitely has more conductivity than pex, but emissivity I don't know. I'd think it's also more or they'd be making radiators out of plastic by now instead of copper? Same theory for the paint, I'd think that would hurt emission more than help. I was always under the impression that copper/brass automotive radiators were painted solely for corrosion purposes. Notice most aluminum rads in today's vehicles are unpainted

That list is at 80 degrees. I am guessing the copper would be a lot higher at 180 than pex.

That should be no problem putting in series. 30 plates have almost no head pressure drop. 20 plates are usually fine in series unless there are a lot of other restrictions in the system.  All the plates are in parallel so the more you have the less restriction you get.
If you had used a 10 plate then the monoflow tees would be needed or a much larger pump.

The size of the ports on a plate exchanger are usually not a bottleneck. Even 3/4" would not be a restriction unless you have full 1" iD or larger piping.

Go with a 20 plate instead. A 10 plate will add a huge amount of head pressure loss.

What about running LED tape on the sides of the beams? You could put a small molding under it if you don't want to see the leds.

There is similar products on ebay for a lot cheaper but I am not sure how good those are.

If you have a volt meter, check for voltage at the fan motor. If it is there then it is a motor problem.
Did you try spinning the fan wheel and see if it starts? If the capacitor is bad, they will usually run if started manually. If that works then check to see if the connections on the capacitor are ok, especially if it is a type that has the capacitor mounted on the outside of the motor housing.

I am not sure why I was thinking that your model stove came with a Ranco. If you are going to change it over then I would just do that and forget about the analog thermometer.

If you have a Ranco controller then jut look at that for the temp. Those mechanical thermometers never seem to be very accurate.

It sometime helps with those thermometers if you wrap insulation around behind the dial.

For comparison of the 146 cfm blowers, the shaded pole draws 1.54 amps. The psc draws 0.75 amps.

If you go to the link you posted, scroll to the bottom. It says discontinued and replaced by Dayton 1TDP7. That is the same size blower.

If you want to go to a different size blower, I would just start looking through the blowers for larger cfm and then check dimensions to make sure it will fit. The 273 cfm model is a common blower used on many stoves but it is quite a bit larger dimensions.

That is just a Ranco controller isn't it? If so, I think the probe length is closer to 2" long. If it looks broken off, I would make sure part of it isn't still in the well. A 1/4" drill bit should work to clean it out. Just make sure you don't drill through the end of the well.

If there was a chunk of it stuck in the well, I would give it a try with it cleaned out before ordering a new one. Also, if there was no silicone around the wire, that would help make it read more accurate.
