I continue to use my Hardy H2 OWB as the occasional meat smoker... It actually works well. I have smoked deer, beef and ham in it. Deer being the best.

I have heard of people placing some oil on the gasket.. Not sure if that will work... also what if you placed a small nail or something in between the damper door and the gasket to help not allow the door to seal

I am using the H2, my house is 1800 sq ft, and my garage is 28x28. Also heat hot water tank... Not sure about the plate exchanger......

I would still do it the cheaper way. I just had to replace one of my grates in my H2 because it broke. I put the original grate (non-shaker) back in it. I am satisfied with the way it works, without the shaker...

Hey guys, good news this worked out well. I waited until the temp outside was about 50 so my house wouldn't need a whole lot of heat. I unplugged the blower so it would not kick on (to blow ashes all over the meat). I used hickory, cherry and apple woods in my Hardy for a couple of days to get all the other nice flavors of wood such as locust, elm, oak etc.. out. I opened the draft door to allow the OWB to get hot and create a lot of smoke. I placed a BBQ grill grate on top of the wood to allow the smoke to get all over the meat, I then placed the slabs venison on the grate. I rubbed it down liquid hickory smoke then added my spices, I used an injector to inject it. (my injection was liquid hickory smoke and my spices combined) I would go out every couple of hours to open the draft door to create more heat and smoke.It smoked for about 8 hours. I tried to keep the inside of the OWB at 160 to 180 degrees. EXCELLENT taste, tender meat... I want to try deer jerky next instead of using a dehydrator.  :post:

I have a Hardy H2, mine does the same thing. You need to have very seasoned wood to start your burning season with. When I first fire mine for the winter I leave my draft door open for about an hour or so so it gets to burning well, then I run my domestic water so the OWB kicks on. You need to have a good bed of coals

With the way I have my H2 set up I can unplug it so the forced air blower does not kick on ( to prevent ashes from being stirred up or blown all over the meat). I think this will work. When I fire it up for the winter I am going to use Hickory and Apple with some venison. I will let everyone know how this works. If any one has any suggestions let me know. Hank

I am wondering if anyone has ever used their OWB as a meat smoker. I am thinking about using my OWB at times as a smoker. I would only use Hickory, Cherry, Apple woods. I have a Hardy H-2, my plan would be to only use a small amount of wood get the inside hot and create a lot of smoke, then use a stainless steel grate to lay my meat on so it gets smoke all around the meat. I would make sure there is no other woods/coal to contaminate the flavor or the meat. Does anyone have any suggestions or has anyone tried this.

My lines are orange, you can cancel your eye exam. lol The dealer had a roll of this that he bought at a Hardy convention in Mississippi to try. He sells a lot of it. It has a small amount of stiffness to it so you can bend it. I don't know if all PEX line is that way or not... Seems to work ok. What wood burner do you have..

My dealer told me to that I did not need a shaker grate. I used my H2 with wood loaded first and then load coal on top of the wood. This works good. After a week or so I will let it burn down to almost no fire left, I will clean out what I can then load it back up. I plan on doing this again this year. I would recommend a heavy poker so you can bang the grate to allow the ashes and clinkers to fall through. I have thought about actually putting in a shaker grate a couple of times. But with gas prices the way they are I will hold off. I also don't think it would benefit me that much to have the shaker grate. My unit works just fine without the shaker.  When you first start the wood burner at the beginning of the winter only burn wood for a week to allow a nice bed of coals, then start adding coal. I have a Hardy H-2, I have burned wood and coal in mine. I did not buy the shaker grate for coal, big mistake!! My dealer said that I did not need it as long as I used wood and coal together. It works, but it creates a little extra work. You have to stir the coals and about once a month let the fire get low so you can remove the rocks and such that do not burn. A shaker grate does this for you.. Hank

I heard of a person who had a high content of sulfur in his water, he put in an in-line water filter to clean the water before it enters the stove. This maybe an option for you. Before I hooked my stove up to the automatic  water fill I had to put water in the stove weekly(due to evaporation). If it was me, I would look at putting in a water filtration system.
Also, how do you like your Hardy H-2? That is the same model I have, and I really like my system. What all do you heat with your H-2?
