The pump on our OWB runs 24/7. We use a sidearm to heat water and it works much better with the pump runing all the time.

I would use a #50 relay from an April Air Humidifier. It clamps around the common wire to the furnace blower motor and it's contacts close when it sees motor current. Use a small transformer, 10 va that comes with most humidifiers, make the transformer hot all the time run power from the transformer to one side of the #50 relay then to the humidistat then to the humidifier and back to the other side of the transformer. On a call for humidity from the humidistat, if the fan motor is running the power will be supplyed to the humidifier.If the fan motor is not running and the humidistat call for humidity no power will be sent to the humidifier.

If your humidifier is line voltage use a #51 relay and do the same as with the low voltage unit, you just won't have the 24volt transformer to deal with.

I see smoke on your web cam. I started ours yesterday at about 3:00 in the afternoon, just for hot water  until this evening when I will open the bypass valves to the furnace HX.

Are you looking for something to control the temp. of the H2 or to control the temp. of your house? It looked like to me that you were wanting to control the temp. in the house and a simple 2 wire heating only Tstat will do the job.

This will be the 6th. season for the 011 on our OWB, it has run 24/7 for the last 5 heating seasons. From late Sept. until the end of May with no problems to this date. I do however run the pump several times througout the summer for several hours to keep it from binding up, I don't know if it helps but it doesn't seem to hurt.
