New technique for sweat soldering low lead and no lead fittings

Was sweating some low lead fittings in the other night, while this isn't something I do daily I'm pretty proficient at it but something just didn't seem right. Googled it and the copper alliance has a video out on sweating the low/no lead stuff in. A little lengthy but worth the watch.

Pretty good video, but I would personally argue a few key points (maybe cause I watched with volume off, so I could watch it at work):

First, why start soldering at the bottom we know with gravity it will flow from top to bottom any way, so why not start at the top (plus I saw alot of solder dripping off)
Secondly, I would have left the ball valve slight open, not completely shut as show in video. (also handy to have a wet rag on have to cool off center portion of valve, to keep from melting seals)

I also know from personal expirense; clear Copper well and do not be in a rush to get the job done.  "Better to do a job once and do it right, then have to go back and repair your mistakes & reputation" - words from my first paying boss
