BOUGHT A RANCHO THERMOSTAT FOR THE BLOWER, WHEN I CLAMPS TO A BLACK IRON PIPE I NOTICE THE THE TEMPERATURE IS LESS THAN THE WATER TEMPERATURE. HOW MUCH DOES THAT VARIES

Not sure about your application, but I was trying to monitor a water line in a similar fashion and found that using some metal tape to seal the probe to the pipe and then wrapping and sealing some insualtion around it really helped a lot.  Especially sealing it.  Airflow really messes it up.

Heat Master uses a dry well in the back of the furnace. I think that is the only way you will be exact. I know that even insulating the probe taped to the back or a water line isn't going to show as hot as the water actually is.
