Aquastats and High Limit Control

I'm nearing completion of a OWB build and need some advice on Aquastat selection, considering the Ranco AQ007 is that an ok choice?

Also, is it ok to use a snap switch for high limit or should I use a 2nd aquastat for that? For high limit I would like to kill the power to OWB boiler blower/air damper and also force the indoor blower for the heat exhanger on to help cool things down, is that commonly done?

Lastly, do most OWB pump configurations allow the circ pump to run 24/7 or are there other control options to cycle the pump?

I personally prefer the johnson control line and would also use their high limit control as opposed to a snap disc but it is all personal preference
