Ok what am I doing wrong? This is my second season with the nc250 and my ash pan has warped in the back and the paint is burnt of the sides. Now the back isn't really under the opening where the fire burns so why is it getting so hot?

How often do you empty it?

every couple days, it's to heavy to lift if it gets full so I would say about half full

Sounds like a lot of ashes, sounds more like your throwing out your coals
I've ran nc stoves before, took ashes out every couple weeks normally, nothing but fine powder, if your dropping coals into the panthe gan blowing on them is likely what warped it

That is what I was thinking too. I would try going longer between emptying it. It seems to work good to open and close it a couple times every day or two to bring the coals to the top and let them burn completely.
