Have cooked (smoked) two briskest sirloins rib eyes in owb in last month use a cage made out of exspanded steel with handle to set on wood . Let temp get to 180 shut fan off let cook awhile turn over try to use cherry or hickory goin to try loin this weekend meat has had excellent flavor just another Benny of owb
