Victor, just for clarification, I'm trying to see what you mean by soaking in more?  The water in the water jacket has nothing to do with this scenario?  Hoping to better answer ur question

Yoder I've seen folks burning green wood like that too, so much water comes out it drips out the ends of the wood like crazy, if that were in a stove with no ash pan things would be much worse for sure!!!

I meant the moisture in the wood can soak into the ash more on a bigger diff setting like 15-20. I set my aquastat at 180 with a 10 diff but when my stove reaches temp according to the stat my temp gauge on the front reads 170. Is the best way to see the actual water temp using a infared temp gun on the pex lines???

No way of knowing really...  The stove could very easily vary that much from one end to the other.  I mean in terms of knowing which one is correct, they both could be correct.   Infrared through pex doesn't work well, very inconsistent from what I've saw.   

You can also check the flow inside the tank by measuring water temp at the top of the water jacket, middle and lowest point,  if circulation inside the tank isn't right you can see huge differences vertically and from one end to the other, but 10 degrees in your case isn't much
