Wow..... There are so many questions in there that would require 10 minutes or more of face to face im not sure where to start.
As far as your water heater, a side arm and 20 plate are not needed together. Just install one of the 2, 20 plates are easier to I install and they both make plenty of hot water, endless amount really.
As far as your radiant, you will need a plate exchanger for it separately, zone valves, zone pumps, all kinds of stuff that most folks know little about.
You'll also need some form of boiler protection, you can't have your return water coming back to the stove under 140, if you do you'll rust the firebox out inside in no time. you can have a primary and secondary loop like all other boiler systems, do not let Anyone tell you that this is not necessary.
